 Post subject: Boozy Christmas Baking?

Boozy NON-Baking

Mocha Rum Balls clearly brought to you by Maxim instant coffee

1/4 cup Maxim 100% Freeze-Dried Coffee
1/4 cup rum
1 tablespoon water
2 tablespoons cocoa
2 cups fine vanilla wafer crumbs
1 cup chopped walnuts (optional)
3 tablespoons light corn syrup (or simple syrup)
1 cup confectioners sugar

Dissolve coffee, rum and water in a bowl. Add remaining ingredients, mix thoroughly and roll into balls. Store in an airtight container for a few days, then roll in more confectioners sugar (I add cocoa to this, too).

If the mixture is too moist, you can add more wafer crumbs, confectioners sugar and/or cocoa as you see fit.

So last year for the Gumbo Limbo party I made up a cookie recipe for the event...
Who doesn't love bar cookies....and Booze?

Tiki Bars

Ingredients:
Zest of two limes
juice of ½ lime
½ cup unsalted butter, softened
1 ½ cups all purpose flour
1/2 cup sugar
Pinch of salt ( I use a little more salt)
1cup coarsely chopped dried pineapple
1cup flaked coconut
1cup macadamia nuts, chopped
1can (14 oz) sweetened condensed milk
1/4 cup Myers Dark Rum (or more to taste)


Preheat oven to 350°F.
Line a 9x13” pan with foil and spray with cooking spray.
The foil is optional, but helps aid in removing these
from the pan. (I use the Reynolds non-stick foil)

Beat butter and sugar and lime zest in a stand mixer
until smooth and light.
Mix in flour, and salt. Beat until the mixture is crumbly.
It’s done mixing when you can press it
together between your fingers and it forms a dough.
Press into the bottom of the prepared pan.
Bake for 10-15 minutes or until it is just slightly
starting to color on the edges...remove from the oven.

While the crust layer is baking, mix the sweetened
condensed milk and the rum in a saucepan
on the stove. While stirring constantly, bring to a boil.
Add more rum to taste...Remove from the heat.

On top of your pre-baked crust, sprinkle:
Coconut ... Create even base layer.
Next sprinkle the pineapple and macadamia nuts evenly
(For color I added a cup of chopped glace cherries)

Drizzle evenly with condensed milk and rum mixture.
Make sure it is even...this is what binds everything
( The baking version of a cocktail mixer).

Bake 30 to 35 minutes or until light golden brown.
Cool completely.

When cool glaze with:
1 ½ cups confectioner’s sugar
2 tablespoons Myers Dark Rum
tablespoon of fresh lime juice
warm in the microwave 15 seconds, beat until smooth
but not too runny ( Adjust with confectioners sugar)

Drizzle across top of pan in diagonals
Cut into bars.

I used a full sheet pan and doubled the recipe
to make about 48 cookies

Personal Statement: I'm pro-metric.
I'm not sure how well cookies would do with added booze. They could bake up a bit weird, depending on how you like your cookies, crispy or chewy. But below are some "boozy" recipes I have baked in the past. They're all blondies / brownies or quick breads. All are tasty, although you'd have to consume way too much of said dessert and get diabetes, in order to even get a buzz.
